This week’s recipe is an easy chicken pasta – enjoy!
EASY CHICKEN PASTA
Cook time: 20 minutes
1 x 500g packet short pasta (penne)
Canola oil spray
1 clover garlic, chopped
1/2 brown onion chopped
1 teaspoon of dried mixed herbs
2 x chicken breasts, diced into 1 inch pieces
1 x canned tomatoes
Parmesan cheese, to serve
- Cook pasta in a large pot of boiling water for 10-12 min until tender. Drain and reserve 1/4 cup of liquid.
- Place a large non-stick pan on medium heat, lightly spray with oil, add garlic, onion and mixed herbs, cook until lightly browned. Add chicken. Cook for five minutes and then add canned tomatoes and simmer.
- Add drained pasta and reserved liquid to the sauce mix, toss to combine.
- Serve with a sprinkle of Parmesan cheese. Belissimo!
